I love crock pot recipes! They’re usually so easy and I love that it smells so good during the day and then it’s all done! And all you had to do was prep a little in the morning. 🙂 These are great for Sunday meals if you’re gone all day, for working parents so it can cook while you’re at work, or for stay at home moms, like myself, who have time to get things going in the morning.
So we bought a huge crock pot in anticipation for a large family…well we still want a large family, but right now there’s only the 4 of us…so we have this huge crock pot for 2 adults and 2 children. I find that my crock pot often burns our food because there just isn’t enough food in there. So my tip to you – either buy a small crock pot and upgrade when your family grows or just double or triple the recipes and have lots of left overs. 🙂
Here’s one of my favorite crock pot recipes that I got from my friend Lindsay:
Crock Pot Cream Cheese Chicken
frozen chicken breasts (I usually use 2 or 3)
2 Tbsp butter
1/3 cup water
1 pkg Zesty Good Seasons Italian Seasoning
8 oz. cream cheese
1 can cream of chicken soup
Put butter in the bottom of the crock pot. Place frozen chicken on top – sprinkle with seasoning, and add water. Cover and cook on low for 5 hours or until chicken is done. Remove chicken. Add cream cheese and soup into the crock pot and mix with hand mixer until smooth and creamy. Add chicken back in and stir together.
You can put this over rice or in pita pockets. So good!
