I took a Wilton Cake decorating class a few months ago and loved it! And my husband has been super supportive of it…maybe it’s so he can eat more cake… Anyway, I got a text from him the other day while he was at work asking if I would make a cake for his friend/coworker. Why not?
His friend was quitting his job and my husband wanted me to make a good bye cake, but to personalize it. This guy is into biking and triathlons so my husband thought it would be fun to make a bike tire cake. It was actually really fun to make and it was delicious! It was super moist! Luckily my husband brought home a piece for me to try it.
It’s a chocolate cake with chocolate and vanilla frosting and a peanut butter mousse. You can find the vanilla frosting on my blog and the peanut butter mousse I found on a blog called Eat the Cookie.
1 block (8 oz) cream cheese
1 jar (1 1/2 cups) creamy peanut butter, the shelf stable kind
1 cup sifted powdered sugar
1/2 cup heavy whipping cream
well chilled bowl until it is super fluffy. don’t over do it or you will have
butter. Set aside.
with the cream cheese until well combined. add sugar and mix on low-speed until
it’s completely blended.
peanut butter. once it appears almost combined, fold in the other half. careful
not to deflate the cream.
