We use the Cozi app on our phones and love it! They also have a website and one of the things on the website is they share a recipe every week. One week they shared Angela’s Zucchini Lasagna and I was really excited about it because we have zucchini coming out of our ears! So I gave it a try and it was actually very delicious so I wanted to share it with you!
3 lbs large zucchini, scrubbed
4 cups spaghetti sauce or thick tomato sauce
1 cup bread crumbs (divided in half)
1 lb ricotta cheese (more, if you like – the original recipe calls for 2 pounds, I used 1 lb and it seemed to be enough)
4 eggs, lightly beaten
2 Tbsp parsley, chopped
½ teaspoon dried oregano
½ teaspoon dried basil
Salt & pepper to taste
1 cup grated Parmesan or Romano cheese (divided in half)
1 pound mozzarella cheese, coarsely grated

1. Slice zucchini into long slices. Cook in boiling water just until limp, about 5 minutes. Drain on paper towels.
