I love salads in the summer. So light and fresh! We had BBQ chicken salad the other night and it was awesome! I also have a Honey Mustard Vinaigrette recipe to share with you to go on top.

For the chicken, I put 2 chicken breasts in a crock pot and covered them with BBQ sauce. I also added a little water at the bottom because my crock pot cooks really hot. Cook the chicken on low for 5 hours.
You can also use fresh corn or frozen corn. Mine was frozen and I cooked it according to the package. Then dice up your other veggies and shred the cheese.
Fill your bowl with lettuce and add as much of the veggies, cheese, chicken, and croutons as you like.
Now for the
HONEY MUSTARD VINAIGRETTE
adapted from How Sweet It Is
2 tablespoons honey
1 1/2 tablespoons mustard
1 tsp Gourmet Garden garlic (or 1 garlic clove minced)
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup balsamic vinegar
2/3 cup extra virgin olive oil
Whisk the honey, mustard, garlic, salt and pepper together in a bowl. Whisk in the vinegar until smooth. While whisking, pour in the olive oil and mix until fully combined. The salad dressing will keep in the fridge for about a week, but it may separate so just shake before using it again.
Drizzle over your salad, mix, and serve!
